To extract audio from a video without losing quality, we are going to use a program called XMedia Recode which you can download from here.
After downloading, installing, and starting XMedia Recode, click on open file (you can also just drag and drop the file or files you want to extract audio from)

Then navigate to where the video file is and double click on it or select it and press enter

Then select the format AAC or Matroska audio (or whatever codec the video is using for the audio) (click here to find out which codec your video is using for audio) (I recommend using Matroska audio instead of AAC)

Then navigate to audio tab, and change mode from convert to copy to keep the codec intact

Then click on add to queue followed by encode

Then you will see the progress window

Followed by this one telling you “creation of media was successful”

Congratulations, you have now successfully extracted audio from video without losing quality, you can find the audio file in the output folder, as you can see at the bottom of the program
